Pahari Kultihi or Pahari gahat, popularly known as Horse Gram is a super food, harvested from the foothills of Uttrakhand. Horse gram has the highest calcium content among pulses and is one of the richest vegetarian sources of protein.

Pahari gahat is well recognized by the folk/alternative/traditional medicine as a potential therapeutic agent to treat kidney stones, urinary diseases, piles, common cold, throat infection, fever etc. Water in which gahat is soaked is taken by people suffering from kidney stones in the belief that this dissolves the crystals.

  • Kulath Recipe

    Preparation time: 15 mins

    Cooking time: 40-45 mins

    Serves 2

    Ingredients:

    1 tbsp vegetable oil

    1 inch ginger, grated/ minced

    2-3 green chilies, slit

    1/2 tsp red chili powder

    ½ tsp coriander powder

    1/2 tsp turmeric powder

    Salt to taste

    1 cup Gahat/kulthi dal, boiled (Horse Gram)

     

    Tempering:

    1 tbsp Ghee

    1/2 inch Gandharein (angelica glabris)

    1 pinch Asafoetida (Hing)

    1 tbsp Cumin or Jakhiya (Wild Mustard)

    1 dry red chillies.

     

    Garnish:

    Coriander leaves

     

    Method:

    -Heat ghee in a wok and add garlic, ginger and green chilies. Sauté till it release aroma

    -Add the boiled dal. Cook for 15-25 minutes.

    -Now add salt, turmeric and  coriander powder, cook again until it turns soft.

    -For Tempering , Heat ghee in a wok, add Jakhiya and dry pepper to it.

    -Remove and serve hot with rice or roti.

    Tip: Squeeze half lemon to enhance taste.
